WIAW # 20

That time of the week again and here is what I ate last Wednesday.
Peas and Crayons
 
I am still feeling inspired after watching the British Cycle Tour in Durham last Thursday and seriously missing my bike.  I am sure I can hear it calling my name from the garage!


Breakfasts a becoming a little dull at the moment so I am trying to vamp it up.  I love my usual oats but sometimes we all need a change.
 
So I had  quinoa pancakes with chopped banana mmmm

 
Mid morning I some Gluten Free bread and cheese spread.  It is great mid morning filler but i don't have a picture to share :(
 
Lunch time and salads are slowly starting to make an appearance and I made a salad in a jar.

Lots of tasty salad with some chickpeas on top.  The bottom of the jar had the dressing so just needed a shake.

Dinner i made a Spring Minestrone Soup. I got the recipe from a book called Super Natural Living by Heidi Swanson who's blog is amazing 101 Cookbooks.  Although I don't stick to the recipe properly it gives me the backbones and is just as tasty.  The main ingredients are brown rice and Asparagus.   It doesn't look that tasty but it was lush.
 
My version
 
100g Brown Rice
Crushed/chopped Garlic, chilli and ginger
1 tbs of olive oil (or oil of your choice)
1 small bunch of spring onions chopped to bite size pieces
A handful of Monge tout or sugar snaps chopped
1 bunch of Asparagus chopped to bite size pieces
1 handful of frozen or fresh peas
1 pint of vegetable stock (you may need a little more)
 
Rinse the brown rice and cooked until just cooked through (about 28 min depending on type of rice).
In a wok add 1 tbs of olive oil and once hot add crushed garlic, ginger and chilli.  After a minute add some chopped spring onions and cook until soft.  Then add some chopped monge tout/sugar snap and cook for one minute.  Add vegetable stock and simmer for a couple of minutes.  Add the cooked brown rice, peas and chopped Asparagus.  Cook until rice is tender and Asparagus is cooked.  Serve into large bowls and enjoy.  I guess the measurements for mine but it is always tasty.
 
Later on I had a two squares of chocolate, one was from Sainsbury's fair trade chocolate and the other was a new range called Galler. 

The Sainsbury's one was by the nicest of the two and the Cocoa nibs are crunchy and lovely.  Would really recommend it.
 
So my second weigh in and my expectations were high, I weighed in at 10 stone (140lb) weight loss of 2lb.  I am sooooooo happy.
 
So do you like to adapt recipes?  Also can you recommend any good dark chocolate?

  2. Congrats! When I lived in London I was too spoiled having the High Street Kensington one tube stop away. They had their own chocolate counter and it haunted me. I also had the luxury of eating sweets and cake just about everything since my walking increased. Wish I could think of good recommendations. Good luck!

    1. Thank you, I am so pleased I have lost weight this week as the last year I have really struggled to lose anything.
      I love dark chocolate and have been having a square or two instead of biscuits.

  3. Any time i can find a dark chocolate bar with ginger i pounce! Green and black's had a nice one, and i had some dark chocolate covered ginger that was lovely i found at whole foods. Congrats on the weight loss!
    The lunch salad jar is so gorgeous!
