Can you believe it is that time of the week again. Here are my eats for last Wednesday.
For Breakfast I had more oats with lovely fresh Blueberries. I really love them and they are so good for you. Win win in my book.
For lunch I picked something that was not the most filling but was tasty. I had some Gluten Free Rice Cakes with Roast pepper hummus and some cherry tomatoes
and cucumber (somehow I didn’t take a
picture of them).
Dinner was a tasty affair of Gluten Free Pasta with homemade tomato sauce and tuna.
To make the sauce I heated some Olive Oil and gently cooked some chopped garlic and sliced onion and chilli. I then added half a carton of Passatta (for two people) and a splash of hot vegetable stock. I let it simmer until it reduced to the consistency required. I then added it to the hot cooked pasta and added the tuna. Very simple but very tasty. I love adding chilli to tomato sauce.
I also tired a new snack of a thick Danone yogurt that was recommended to me from a friend at work but was also mentioned at Chocolate andBlueberries. They are super thick and creamy and I found them to be filling too. My supermarket sell them in two flavours, Strawberry and Blueberry. They only had the strawberry ones in stock and I would have loved to try the blueberry.
The weeks are quickly flying until my first 10k and I have to say that for the first time in the last 1 1/2 years I am starting to feel so much more fitter. I am so pleased and although I love cycling I am also really enjoying running.
My weigh in was last night and lost another 1lb so 9st 13lb (139lb)
