WIAW # 24


It is that time of the week again WIAW as ever it is last weeks eats,  thanks to Peas and Crayons

I am still buzzing from our first 10k on Sunday.   I am also looking for my next challenge as have caught the bug!
Before, all fresh

Before looking sprightly
After, so happy!

Before I forget I had my weekly weigh in and lost 2lb bringing me to 9st 10lb (136lb).  I am so pleased as last week I only lost 0.5lb and was expecting more.  I have worked really hard this week and only had one glass of wine.

Breakfast

I fancied a change from the usual oat and had mushroom omellete and it was lovely.


Mid-Morning snack

Still rocking the rice cakes and Banana
Lunch

Lovely fresh beetroot and gluten free pasta salad.  I cooked the pasta with some spice and low salt organic vegetable stock and it was lovely.
Mid-afternoon Snack

I had one of my hubbies Greek and honey yogurts.  They are super creamy and totally lush.
Dinner

Pastry-less quiche

It is one of my go to recipes as it is so easy. 
200g new potatoes, thinly sliced
Vegetables of your choice chopped small (I used onion, courgette, red pepper and mushrooms)
4 eggs
150g low fat cottage cheese
20” round dish with fixed bottom
 




Pre-heat the oven at 200o C.  Cook the potatoes until just cooked through.  While they are cooking gently fry the veg until just cooked through.  Drain and let the potatoes dry (if running short of time dry on kitchen roll.  In a jug mix the eggs and cottage cheese.  Put the potatoes and veg into your dish and poor over the egg mix.  Mix all together gently and put in the oven.  Cook in the over at 200oC for 25 min or until set and golden.  You can serve with a salad but I had none!!  It is also really nice cold the next day.

 
Will dinner i enjoyed a well deserved glass of white.

  4. I'm a bit late to this post and also new to your blog :) That quiche recipe sounds SO good. I'm always looking for new ways to use eggs and potential breakfast meals! I love meal planning, but always lack in the breakfast ideas.

    And huge congratulations on your first race! My first official race was a 5k in 2009. After that I got the marathon bug and have had it ever since! Happy running and keep up the great work!
